This is a high protein meal (we boxed up lunches for the next day that had about 60 g of protein in them each! ) that took less than 30 minutes and could be served two ways becasue our house is split between wanting a Noodle bowl or a Rice bowl. Crispy Mirin Sesame Chicken – 2 Ways
Chicken:
• 3 lb boneless chicken thighs, bite-sized
• 1 Tbsp salt, 1 tsp black pepper, 3 tbsp mirin
• 1½ cups potato starch, ¾ cup water
• Sesame oil for frying sookifoods
Method:
Toss chicken with salt, pepper & mirin. Coat in potato starch + water. Fry in batches 4–5 min per side until golden & cooked through. Keep crispy.
