Hungarian Nokedli AKA Spaetzle
Ingredients
• 8 eggs
• 5 cups flour
• 4 Tbsp vegetable oil
• 4 tsp salt
• Water, as needed
• 1 Tbsp oil (for tossing cooked nokedli)
Instructions
Make the Batter
1. In a medium mixing bowl, combine the eggs, flour, 4 tablespoons of oil, and salt.
2. Mix with a fork until the mixture forms a thick, sticky mass.
3. Add ½ cup water to start, mixing well.
4. Continue adding small amounts of water until the batter resembles thick pancake batter—soft enough to drop through a “spaetzle maker” (found on Amazon), but not runny.
5. Use the batter right away or refrigerate for up to 24 hours.
