The Tunacado sandwich has gained its popularity from well know chain Joe & Juice and although I’ve never had one, my daughters have and told me I needed to try my hand at it.
The sandwich’s appeal lies in its wonderful blend of textures. A crispy flatbread is packed with a creamy tuna filling described as having a mousse-like consistency then layered with pesto, avocado, and tomato. You can order a regular version or a spicy version.
Im using my regular spicy tuna salad for this sandwich and although I didn’t have flatbread, I did have a ciabatta loaf which I toasted in a cast iron and pressed down to make it somewhat thin. I also made a Chipotle Aioli to drizzle on top

Homemade Spicy Tunacado Sandwich

Spicy Avo-Tuna:
2 cans tuna (I like to really smash the tuna well with a fork before mixing)
1 ripe avocado, diced up
2 tbls kewpie mayo
1/4 cup diced red onion
1/4 cup diced celery
1/4 cup chopped dill
1 tbls chili crisp
Juice of one lemon
Salt and pepper to taste...
