Fish:
2 pounds cod
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon cayenne pepper
1 teaspoons oregano
1 teaspoon dried thyme
2 teaspoons salt
1/2 a lime juiced
-Add cod to a large bowl along with all ingredients. Mix until fish is fully coated. Let fish marinate for 30 minutes.
-Preheat oven to 400°F. Bake cod for 8-10 minutes. Optional: turn oven boiler on to crisp the top of fish for about 2 minutes.
Mango slaw:
1 mango, finely chopped
1/2 red onion, diced
1 red bell pepper, chopped
1/4 cup pickled jalapeños, chopped
1/4 cup cilantro, chopped
3 cups shredded cabbage
1/2 a lime juiced
Salt to taste
2 teaspoons olive oil
-Add all ingredients to a bowl and mix until combined. Place in the refrigerator until ready to serve.
