A slow afternoon is enough to put Michelle Wachsmuth on edge.
Five days a week, from open to close, you can find her dashing throughout the many dining rooms of Old Town Portland’s historic Wachsmuth Building — tending bar or shucking shellfish at Dan & Louis oysterbarpdx, the restaurant her husband’s great-grandfather first opened as a seafood market in 1907.
“This is a huge responsibility that I don’t want to screw up,” Wachsmuth says. “I don’t want it to close on my watch.”
