Did you know that for most of the year, poinsettias are entirely green? They only flower and produce their brilliant red leaves during winter months, when they receive less light. Plants that respond to low light situations like this are called photoperiodic. As an added bonus, the red color in poinsettia leaves are due to pigments called anthocyanins, which also change color based upon pH!
