Beat the butter and sugar together until smooth and fluffy. Mix in the egg and vanilla extract. 2. In a separate bowl whisk flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until a dough forms. 3. Divide the dough into discs, cover in plastic wrap and chill for 1 hour. 4. Roll the dough to about 1/4 inch thick on a lightly floured surface before cutting out shapes. 5.
