Idli and chutney isn’t just food, it’s nostalgia. The aroma, the softness, the first dip into chutney… it always reminds me of mornings in India that I wish I could relive. ✨ Chutney Recipe • Heat a little oil in a pan, fry peanuts until golden. • Add roasted chana dal, a small piece of ginger, a few mint leaves, coriander leaves, green chilies, and a piece of tamarind. Sauté briefly. • Transfer to a mixer jar with grated coconut (I used desiccated coconut), salt, and water. Blend to a smooth chutney. Keep it slightly runny by adjusting with water. • Temper with oil, cumin seeds, mustard seeds, dry red chilies, a pinch of hing, and curry leaves. ✨ Idli Batter • Soak 1 cup urad dal and 2 cups idli rava. • Grind to make a smooth batter and allow it to ferment really well.
