Perfect when you’re craving something light yet nourishing. This dish is new to me too, and I was genuinely surprised by how comforting and flavorful it turned out — all in under 30 minutes!

Quinoa Veg Pulao (Pressure Cooker Method)
1. In a pressure cooker pan, heat a little oil. Add a few cloves and cardamom pods.
2. Add chopped onions and a few curry leaves. Sauté until the onions turn soft.
3. Stir in ginger-garlic paste and sauté until the raw smell disappears.
4. Add chopped veggies — I used potatoes and carrots — along with tomatoes and green chilies. Sauté everything well.
5. Season with salt, turmeric, red chili powder, and a pinch of garam masala. Mix well.
6. Add 1 cup of washed and soaked quinoa along with 1½ cups of water.
