This one skillet meal is amplified immensely due to this kicking roasted red pepper sauce which is amazing on its own, but enveloping these sautéed chicken breasts makes this an unforgettable meal! Sautéing up some peppers and adding fresh spinach at the end makes it a complete and delicious dinner.
I served this over orzo, but it would be just as good over rice or mashed potatoes

Sautéed Chicken Breast with Roasted Pepper Sauce and Spinach

1 16oz. jar roasted red peppers
2 tbls olive oil
1/2 cup chopped onion
3 cloves garlic, chopped
1/2 tsp dried basil ($0.05)
Freshly cracked black pepper
Pinch salt
6 leaves fresh basil
3/4 cup heavy cream
2 big handfuls of fresh baby spinach
Chopped parsley for garnish
