As Chanel’s master perfumer, Olivier Polge creates new fragrances and preserves the classics. The work is part art, part science. Known in the industry as a “nose,” Polge is able to identify thousands of smells, like a sommelier of scent. But he says his nose is nothing special. “I don't smell things that you don't. The work of a perfumer is not to smell things that nobody smells, but it is to identify the scents,” says Polge.
