Crispy Durban curry doughnuts 🔥
The best way to upgrade leftovers—crispy on the outside, rich and spiced on the inside. Inspired by curry doughnuts, but made the easy way with sandwich bread.
Recipe (easy version):
• Leftover chicken curry (cold from the fridge)
→ Remove any bones
→ Chop or shred the chicken into smaller pieces
→ Chop or mash potatoes so everything fits neatly
• Sandwich bread
• 2 eggs, beaten
• Panko breadcrumbs (or any breadcrumbs)
• Oil for frying (or air fryer spray)
Method:
1. Lay down your bread, add a spoon of curry, and seal with another slice.
2. Press and cut into rounds (cookie cutter or a mug works).
3. Dip into egg, then breadcrumbs—repeat for a double coating.
4. Fry in hot oil until golden and crispy (or air fry with a little oil spray).
5. Optional: spoon hot oil over while frying for even crisping.
Make-ahead tip:
Freeze them after coating. Fry straight from frozen at a slightly lower heat until hot through and crispy.
