Strawberry Shrimp Ceviche

Ingredients
* 1 lb raw shrimp, medium to large, cut into bite-sized pieces
(If you can’t use raw shrimp, dip in boiling water for 2–3 minutes, then cool)
* 1 cup freshly squeezed lime juice
* 1/2 red onion, diced
* 1 jalapeño, seeds removed, finely chopped
* 1 cup chopped fresh cilantro
* 1 English cucumber, diced
* 2 cups fresh strawberries, diced
* Salt, to taste
* Tortillas, tortilla chips, or tostada shells, for serving
Instructions
1. Add the shrimp to a large bowl and pour the lime juice over it, making sure the shrimp is fully submerged. Let it sit for about 20 minutes, or until it begins to turn pink and opaque.
2. Add the red onion, jalapeño, cilantro, cucumber, strawberries, and salt. Stir well to combine.
