Ragi Aloo Paratha 🤎
I’d been craving aloo paratha and made a very last-minute decision to whip these up and honestly, they didn’t take long at all! While the veggies were cooking, I got the dough ready. My twins and I loved them!! I paired mine with edamame, roasted broccoli, and a side of Greek yogurt for a well-balanced, protein- and fiber-packed meal. So satisfying!
✨ Recipe below:
Stuffing:
• 2 medium potatoes (boiled and mashed)
• 1 cup mixed veggies (I use the organic mix from Trader Joe’s)
• 2 tbsp dry fruit powder
• 1 tbsp coriander powder
• ½ tbsp garam masala
• ½ tbsp pav bhaji masala
• Salt to taste
• A handful of chopped cilantro
Dough:
• ½ cup whole wheat flour
• ½ cup ragi flour
• Salt to taste
• 1-2 tsp ghee
• Warm water as needed
