Had some zucchini flour that I made with my freeze dryer last year from zucchinis that got giant in my garden. Wasn’t sure what to do with it so I used some today to make some cakey brownies. Pretty dang good if I may say so myself. I am NOT A CHEF or BAKER OF ANY KIND! But here’s how I did it for those of you out there who freeze dry your garden hauls…I’m definitely going to play with this recipe, but it was a good start. Feel free to modify and let me know what worked!!! Or if you are a baker, help a girl out and gimme some tips! ☺️
2 C zucchini flour
3/4 C cocoa powder
1/2 C monkfruit sugar or sweetener of your choice
1 t baking powder
1/2 t baking soda
2 eggs
1/4 C sourdough discard (because, why not?)
1/4 C melted coconut oil
1 C water
Dash of@vanilla
1/4 C chocolate chips
Mix dry ingredients
Add wet ingredients
Top with chocolate chips
Bake at 350 for 35 minutes
Makes 8 brownies
