Dafina (Skhina): The heart of the Sephardic Shabbat table. A slow cooked meal of meat, potatoes and chickpeas that’s deeply rooted in tradition.
It’s a dish that’s been synonymous with Jewish life in North Africa for centuries. It originated from the Spanish dish “Adafina” and was brought to Morocco by Sephardic Jews who were expelled from Spain. Dafina is typically eaten on Shabbat, the day of rest, as it’s prepared the day prior and was traditionally cooked overnight in the community oven resulting in a perfectly cooked meal the next day.
