It’s been exactly 10 YEARS since I started traveling to Morocco to learn more about Moroccan food. My first visit ever was to Marrakech during Ramadan which was such a special time to visit. At this point in my life, I was already cooking Moroccan food back at home in Los Angeles, California. I was working to perfect all of the famous Moroccan dishes that most Americans know like Moroccan Lamb Tagine with Prunes & Chicken Tagine With Preserved Lemon & Olives. But, my first trip to Morocco truly opened my eyes to the vastness of the Moroccan kitchen. It was the first time I’d had things tangia, baghrir, fekkas and chebakia. It was also the first time visiting a spice shop and smelling freshly ground ras el hanout (a smell I’ll never quite get over). Needless to say - after one visit, I was HOOKED.
