Boulfaf: Grilled Lamb Liver Wrapped in Caul Fat. This very famous dish is synonymous with Eid al-Adha in Morocco and is typically one of the first dishes eaten during the feast. The cubes of meat are typically seasoned with cumin, hot chili and sometimes paprika. For the spice blend, I used equal parts cumin and paprika with a large pinch of salt and cayenne pepper.
