MAAKOUDA: A delicious potato fritter that’s crispy on the outside and creamy on the inside. Maakouda is a popular street food that you’ll find across Morocco that can be eaten on their own or in a sandwich. Here’s how to make them at home:
Ingredients:
2lbs potatoes
2 cloves garlic, minced
1.5T fresh parsley, finely chopped
1.5T fresh cilantro, finley chopped
2t ground cumin
1/4t turmeric
1/4t ground black pepper
2t mina harissa
Salt to taste
2 eggs
Flour, for dredging
Olive oil, for frying
Peel potatoes and cut them into similar sized pieces. Place potatoes in a pot of salted water and bring to a boil. Cook until the potatoes are fork tender. Drain and allow the potatoes to cool completely.
In a mixing bowl, mash the potatoes using a food mill, potato masher or a fork. Once smooth add garlic, parsley, cilantro, cumin, turmeric, black pepper and harissa. Add salt to taste. Once seasoning is correct, mix in 1 egg.
