Seffa Medfouna: A traditional Moroccan dish of savory chicken or meat hidden inside a giant dome of steamed vermicelli or couscous. The entire dish is decorated with raisins, powdered sugar, cinnamon and ground almonds. In some grand versions, you’ll find other nuts and dried fruits topping the dish as well. It’s sweet, it’s savory and it is insanely delicious. 😋 It’s one of the few recipes I know of where vermicelli is steamed, not boiled. Traditionally it’s steamed in the top portion of a couscousiere 3 to 4 times or until the noodles as perfectly soft, light and silky. Stay tuned for the full written recipe so you can try it at home.
