Qotban: Marinated Meat Skewers Grilled To Absolute Perfection. You’ll find this traditional street food throughout Morocco, but it couldn’t be easier to make at home.
2.25 lbs boneless leg of lamb cut into 1” cubes
1/4c fresh parsley, finely chopped
1/4c fresh cilantro, finely chopped
1.5t ground cumin
1.5t ground paprika
1.2t ground black pepper
3 T olive oil
Salt and pepper to taste
Skewers (pre-soaked if using wooden skewers)
In a large bowl, combine lamb, parsley, cilantro, cumin, paprika, black pepper, olive oil and salt. Mix until the lamb is evenly coated. Cover the bowl and refrigerate for at least 2 hours allowing the flavors to infuse into the meat.
When you’re ready to grill, prepare the grill and thread the marinated lamb pieces onto the skewers leaving no space between each piece.
