Msakhan: A Delicious Palestinian Dish Of Chicken Cooked In Spices & Caramelized Onions On Taboon Bread.
After consulting countless recipes, I realized there are several different methods to making this at home. Here’s how I decided to prepare it:
For The Chicken
4 Skin On, Bone In Chicken Leg Quarters
4T olive oil
1T ground sumac
1T 7 spice
3/4t black pepper
1/2t ground all spice
Salt, to taste
For The Onions
4 medium sized onions, diced
3/4c - 1c olive oil
2 heaping tablespoons, ground sumac
1t 7 spice
1/2t cumin
3/4t black pepper
Salt, to taste
For Serving
Day Old Taboon Bread, Pita Bread or Naan
1/3c pine nuts, toasted in olive oil
1/4c parsley, chopped
Preheat oven to 450 degrees.
In a large bowl, combine chicken, olive oil and spices. Massage the spices into the chicken and set aside for 15 minutes (this can be done a day in advance and left to marinate in the fridge). Place on a sheet pan and bake in the oven for 35-40 minutes, until the chicken legs reac...
