Homemade Honey: Also known as Miel Maison or Assal Manzili, this sugary syrup is a common substitute for honey in Morocco and Algeria. The process is simple and the end results are surprisingly… like honey! 1kg sugar Filtered water 1 lemon, juiced 3T mazyana_brand orange blossom water Add your sugar along with 3 standard tea glasses of filtered water (each glass holds approx 3/4c of water) to a pan and cook over medium heat, stirring occasionally. Add the juice of a lemon plus enough water to top off the tea glass (or enough to amount to 3/4c of liquid total). There should be 4 tea glasses or approx 3 cups of liquid per 1kg of sugar. Bring to boil, reduce to simmer and cook until the sugar has thickened and it turns a warm amber color, about 15 minutes. Keep an eye on your sugar once it starts to brown as it can go from brown to burnt very quickly.
