Sellou Vs. Zmita: What’s the difference?
Once again this when I posted my Sellou video it sparked a debate around whether Sellou, Sfouf, and Zmita are the same. Last year I consulted the experts - thanks tasteofmaroc - and while the Sellou and Zmita are similar - they are different. The names may be used interchangeably across regions (I see you Souss) but here are some things that generally define Sellou and Zmita:
Sellou is typically made with ground almonds, sesame seeds and toasted flour. Cinnamon, ground anise and ground fennel seed are popular spices that are incorporated into the mix. The confection comes together with clarified butter or olive oil (for a healthier version) alongside honey and/or powdered sugar. Sellou is typically made in large quantities and can stay at room temperature for weeks without spoiling as the butter is clarified.
Zmita is typically made with a different mix of grains and can potentially include grilled ground chick peas, ground barley...
