Happy Couscous Day! In Morocco couscous is eaten almost exclusively on Fridays. It’s a beautiful (and delicious) tradition. For the first time last week I made couscous by hand. I was making baddaz and as corn couscous is almost impossible to find in the US - I was left with no other option but to make it myself from corn flour. It was actually easier than I thought it was going to be and the couscous itself was unbelievably light. It had the texture of a “fine” couscous.
