The Amazigh community has contributed immensely to what Moroccan food is today. They’ve given the world couscous, amlou, argan oil and so much more.
Argan Oil is indigenous to Morocco and is so unique it’s been given UNESCO status. It’s largely produced today in co-ops run by Amazigh women.
Amlou is a paste make from toasted almonds, agran oil and honey. Salt is not in the most traditional of recipes, but adding a pinch brings out the flavors. Amlou can vary in consistency from very thin to slightly thick. The beautiful thing about this recipe is you can change it to your taste. Want it to be a thinner consistency? Add some organ oil. Want it to be sweeter? Add more honey.
Here’s a base recipe:
230g raw almonds ground into almond butter
4T Roasted Culinary Argan Oil, or to taste
2T-3T Honey, or to taste
Pinch of salt, optional
