Yennayer, The Amazigh New Year, starts January 12 in Algeria and is January 14 in Morocco. 2 years ago inzan_wisdom and I celebrated Yennayer by making this video of one of the most iconic dishes associated with the holiday, Tagoulla. We have something special planned to honor Yennayer being recognized as an official national public holiday in Morocco! ⁣⁣ To Prepare Tagoulla ⁣⁣ 1 part cracked wheat or wheat semolina⁣⁣ 3 parts boiling water⁣⁣ Olive Oil⁣⁣ Salt⁣⁣ ⁣⁣ Start by washing your wheat.  Add wheat to boiling water along with a splash of olive oil and a big pinch of salt.  Reduce to simmer and cook over low heat for about 30 minutes, stirring occasionally so it doesn’t stick.  As it becomes dryer and starts to thicken, stir constantly.  Once all the water has been absorbed, cover for 5 minutes.⁣ Serve with a selection of dates, almonds, amlou, smen, olive oil, ...
