Meskouta: Tea Cake With Yogurt & Vanilla. Meskouta is commonly made with a neutral oil but I’m using Desert Miracle from Atlas Olive Oils. It’s a smooth and slightly sweet olive oil which is perfect for baking.

Note: This recipe uses a 5.3oz (150g) cup of yogurt which is to be used to measure the remaining ingredients. If using a smaller size cup is used, reduce number of eggs to 3.
4 eggs, separated
1 small plain yogurt (approx 150g)
1.5 cups sugar
1 cup Desert Miracle by atlasoliveoil
2 packets of vanilla sugar or 2 tsp vanilla extract
1 packet or 7g of baking powder
3 cups flour
Pinch of salt
Preheat your oven to 350°F. Prepare a round bundt pan by oiling it generously and dusting it with granulated sugar.
In a large bowl whisk together egg yolks, sugar, yogurt, olive oil, vanilla and salt. Whisk to combine.
Sift in flour and baking powder mixing just until combined.
