The first time I tasted Tagine With Cardoon (or Kharchouf in Darija) was in Fes, Morocco in March of 2020. It was days before the world started to shut down due to the COVID-19 crisis and to date - it was one of the most memorable meals I’ve eaten. ⁣ ⁣ I was introduced to what the server referred to as the “celery tagine” (spoiler alert - it wasn’t celery) and it was the first time I tasted bastilla with pigeon. These are now two of my favorite things to eat. ⁣ ⁣ Finding cardoons outside of the Mediterranean region is complicated - even when they are in season only a few stores in major cities in the US seem to sell them. ⁣ ⁣ I was so grateful to find these in Chicago this year. And, more grateful to be able to replicate the delicious meal I had in Fes. ⁣ ⁣ If you’re lucky enough to find cardoons in your city, definitely try making this exquisite tagine.
