Loubia: A delicious Moroccan stew of tender white beans simmered in a savory tomato sauce.
This recipe is inspired by the mina collection of Moroccan plant based bean stews. It can be made in an electric pressure cooker as outlined below or cooked in a heavy bottomed pot with an adjusted cooking time. Hope you enjoy!
2 cups dried cannellini beans, soaked overnight
4T extra virgin olive oil
1 medium onion, grated
3 cloves of garlic, grated
1/2t cumin
2t paprika
1/2t turmeric
2t ginger
1/2t black pepper
2 large tomatoes, grated
1T tomato paste
1.5 T finely chopped parsley
1.5 T finely chopped cilantro
1 liter water
2t salt, plus more to taste
