Why is it that the simplest dishes are often the ones that are the most complicated to get right? ⁣ ⁣ Whole Fish Roasted in Chermoula is one of those dishes for me. The ingredients are simple, the preparation (although somewhat time consuming) is simple and yet - it never quite tastes the same as it does in Morocco.⁣ ⁣ Over the weekend I shared a recipe for this iconic Moroccan dish. While I will not say it compares to the versions I’ve had in Morocco - it’s my best version yet.⁣ ⁣ I used branzino or Mediterranean sea bass which cooked beautifully on top of potatoes, carrots, tomatoes and peppers. ⁣ ⁣ You can see it come together in the photos above along with a final photo of a version I had in Fes, Morocco a few years back that is my gold standard of what I strive for this dish to be.⁣ ⁣ If you haven’t already check out the video and recipe.
