Pigeon bastilla has always seemed somewhat elusive to me as we don’t typically cook with pigeon in the US. I had never tasted it and certainly never cooked with it. A few years ago when I was in Fes, Morocco (where the pigeon version of bastilla originates from) I decided to find a restaurant that sold it so I could try it for the first time. Let’s just say… I was not disappointed. The only disappointing part was seeing live pigeon for sale in the Souk the following day. 😅😭 I’m including a photo of the first pigeon bastilla I ever tried here as well - it’s the last photo in the carousel.
