Masala mango chutney!
Some recipes don’t need many words—just a quiet kitchen, the season’s best mangoes, and a little time. Try it the next time you bring home raw mangoes.
Instructions:
1. Prepare the Mangoes:
Cut the raw mangoes into small pieces and set them aside in a bowl.
2. Make the Spice Powder:
In a dry pan, roast coriander seeds, fenugreek seeds, cumin, and mustard seeds on a low flame until fragrant. Allow it to cool, then grind into a fine powder. Add the freshly ground spice powder to the mango pieces
3. Prepare the Chili-Tomato Base:
In a pan, heat some oil and sauté chana dal and peanuts until golden. Add chopped tomatoes and dry red chilies. Cook until soft. Let it cool slightly, then blend into a smooth paste.
4. Combine Everything:
Add the tomato-chili paste to the mangoe pieces along with salt and red chili powder as needed. Mix everything well.
