Bright flavors and beautiful presentation for a spring dessert or breakfast treat. To make this more simple you can pick up a premade tart shell or dough.
Filling:
2 1/2 teaspoons powdered gelatin
1/4 cup cold water
1/2 cup lemon curd
1 1/4 cup heavy whipping cream, whipped to soft peaks
-Add water and gelatin to a small sauce pan. Let gelatin soak for a couple of minutes. Then melt over low heat.
-Add lemon curd to a large bowl and stir in gelatin.
-Gently fold in half the whipped cream. Fold in the remaining whipped cream and add to the tart shell immediately.
Toppings:
Banana
Kiwi
Mango
Strawberry
Blueberries
Shaved coconut
-To add shine to your fruit, mix and melt a fruit preserve with 2 teaspoons water or lemon juice in a small saucepan over low eat. Gently spread over the fruit with a brush.
