I sometimes like to puree veggies and and add it to my sons lunches (it’s not the best way but works). These are high in protein and the addition of peas and spinach make them wholesome and perfect idea for school lunchbox. I love to enjoy them with dollop of Amul butter but you can have them with yogurt. The school lunch box came back empty and that means this recipe is a keeper.
Hara Bhara Cheese Parathas
1 cup spinach
2 green chilies (optional)
1/4 cup green peas
2 Amul cheese cubes
Sale as needed
1 cup whole wheat flour
Water as needed to bind the dough
1 tablespoon ghee
1/4 cup yogurt to serve
Blanch the spinach, frozen peas and green chilies
Once it cools grind it into thick puree
In a bowl take whole wheat flour, add the spinach peas puree and salt and bind it together into a form dough
Roll a portion of the dough in round shape
Apply ghee and then shred cheese over it
Fold it into semi circle and then into triangle
Follow same steps for remaining Parathas
