Made from whey and naturally creamy, ricotta works beautifully in both sweet and savory recipes, but here it becomes a warm, fluffy potato filling spooned over crisp crostini.

Ricotta & Potato Crostini
Ingredients:
● 2 medium russet potatoes
● 1 cup whole milk ricotta
● 2–3 tbsp chives, finely chopped
● 1 tsp garlic powder
● Salt and pepper, to taste
● 1 baguette, sliced into ½-inch rounds
● Olive oil or butter
Instructions:
