This Durban Masala Schnitzel is crispy, comforting, spicy, fresh, and shaped by the cultures I grew up around π
INGREDIENTS π
Schnitzel:
2 chicken breasts, flattened
1 tsp masala
1 tsp turmeric
Salt and pepper
2 eggs
Flour for coating
Panko breadcrumbs
Extra masala for breadcrumbs
Tomato Chutney π
4 tomatoes
1 onion, sliced
2 garlic cloves
1 tsp masala
1/2 tsp turmeric
1/2 tsp mustard seeds
Pinch chilli flakes
1 tsp brown sugar
Splash vinegar
Salt
Oil
Salad π₯π₯
1 cucumber
2 carrots
Fresh coriander
Lemon juice
Salt
METHOD β¨
Season chicken with masala, turmeric, salt and pepper.
Coat in flour, egg, then panko breadcrumbs mixed with masala.
Air fry at 200C until golden and crispy.
For the chutney, cook onion, garlic and mustard seeds in oil until soft. Add tomatoes and cook until softened. Peel skins off, mash, then add spices, sugar, vinegar and salt. Simmer until rich.
Shave cucumber and carrot into ribbon...
