Celebrating the summers berry bounty with these Berry Crumb Bars. I can’t think of anything more perfect to serve alongside a cup of tea than a square of these fruit and crumble bars. You can use a combination of any berries or just use one type. Simple to assemble they are the perfect treat for company.

Berry Crumb Bars

1 cup white sugar
1 tsp baking powder
3 cups all purpose flour
1/2 tsp salt
Zest of one orange
1 cup cold butter cut into pieces
1 egg
1 tsp vanilla
5 cups fresh berries ( I used blueberries, raspberries and chopped up strawberries)
1/2 cup white sugar
4 tsp cornstarch
Juice of one small orange
Preheat oven to 375F
Spray a 9x13” pan with non-stick spray.
In the bowl of a stand mixer, combine sugar, baking powder, flour, zest and salt. Add chopped up butter, egg, and vanilla and mix until the the mixture is crumbly.
