10 minute pineapple upside down cheesecake Ingredients: 1 6 inch pre-made cheesecake Maraschino Cherries 1/2 Cup Pineapple Juice 3/4 Cup Brown Sugar 6 pieces pineapple rings Pinch of salt 4 Tbsp Butter Instructions 1. In a pan, combine pineapple juice and brown sugar over medium-low heat. Add pineapple rings and simmer gently for about 10–12 minutes, flipping occasionally, until lightly caramelized. Remove and place on parchment paper to cool. 2. Turn off the heat and add cold butter to the remaining pineapple reduction. Stir until melted and emulsified into a smooth caramel. Finish with a pinch of salt to balance. 3. Pour the warm caramel over the cheesecake and spread evenly. Arrange the candied pineapple rings on top and garnish with maraschino cherries. 4.
