Kare-kare pot pie — rich, comforting, and made with intention.
Food scraps from recipe testing go straight into my mill food recycler, helping keep waste out of the trash while I cook.
Ingredients
Kare-Kare Filling
* 2 lbs beef chuck steak, cut into large chunks
* Salt & black pepper, to taste
* 5 cloves garlic, minced
* ½ yellow onion, diced
* 2 Tbsp annatto powder
* 2 cups water or beef stock
* 1 beef bouillon cube (if using water)
* 1 cup peanut butter
* 1–2 Tbsp toasted rice flour (for thickening)
* 1 Tbsp brown sugar
* Salt & pepper, to taste
Vegetables (pre-cooked)
* 1 bunch bok choy, steamed
* ½ cup eggplant, steamed
* ½ cup green beans, steamed
* 1 cup potatoes, boiled
For Assembly
* Puff pastry
* Egg wash (1 egg beaten with a splash of water)
Instructions
1. Sear the Beef
Season the chuck steak generously with salt and pepper. Sear in a hot pan until well browned on all sides. Remove and set aside.
2. Build the Base
In the same pan, sauté the onion and garlic until fragrant....
