Filipino Pork Adobo – Gids’ Recipe
Tender pork belly braised in a rich, tangy, and savory sauce. A comforting Filipino classic best paired with steamed or garlic fried rice.
Ingredients
Pork & Aromatics:
* 2 lbs pork belly, cut into bite-sized pieces (I used meat from eat.campogrande )
* ½ yellow onion, thinly sliced
* 6–8 cloves garlic, crushed or minced
* 2–3 bay leaves
* 2–3 tsp black pepper (adjust to taste)
* Kosher salt, for seasoning
Adobo Sauce:
* 100 ml white vinegar
* 75 ml water
* 50 ml soy sauce
* 1 tsp dark soy sauce (optional, for deeper color)
* 3–4 tsp brown sugar
Instructions
1. Thinly slice the onion and crush the garlic. Set aside.
2. Season one side of the pork with kosher salt. In a pan over medium heat, sear pork until browned on both sides. Remove and set aside.
3. In the same pan, sauté onions for 1 minute. Add garlic and a pinch of salt; cook for another minute.
4. Return the pork to the pan. Deglaze with 75 ml water, scraping up the brown bits.
