Filipino Tocino Bacon
Ingredients
For the Bacon:
* 1 lb thick-cut bacon
Tocino Marinade:
* ½ cup pineapple juice
* ½ cup brown sugar
* 6 cloves garlic, finely chopped
* 1 Tbsp black pepper
* 1 Tbsp soy sauce
* 2 Tbsp white vinegar
* 2–3 tsp beetroot powder (optional, for natural color)
or
5 drops red food coloring
Instructions
1. Make the Marinade
In a bowl, whisk together the pineapple juice, brown sugar, garlic, black pepper, soy sauce, vinegar, and beetroot powder or food coloring (if using).
2. Marinate the Bacon
Place the bacon in a deep bowl or container and pour the marinade over it. Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors soak in.
3. Cook the Tocino Bacon
Start with a cold pan. Lay the marinated bacon slices flat in the pan and add about ⅓ cup of water.
Simmer gently over low heat for 10–15 minutes, or until the water has fully evaporated.
