Taiwanese Popcorn Chicken
Ingredients:
2 lbs boneless skinless chicken thighs
Vegetable oil or canola oil for deep frying
Fresh basil for garnish
Sweet potato starch for coating
Marinade:
Egg whites from 2 eggs
2 Tbsp fresh Ginger - grated
4 Cloves Garlic - grated
1 tsp white pepper
4 tsp soy sauce
4 tsp xiaoxing wine or (Dry sherry wine/ Sake/ Mirin)
2 tsp chicken powder or consommé powder
Seasoning:
2 tsp White pepper
1.5 tsp Chinese 5 spice
1 tsp sugar
1 tsp Kosher salt or to taste
Instructions:
1. Cut the chicken thighs into bite sized pieces. A large chicken thigh should yield 7-9 bite sized pieces.
2. Make the marinade by mixing the ingredients listed above.
3. Marinate the chicken for at least 2 hours but preferably overnight.
4. Once the chicken is done marinating, pre-heat your oil to 375 F.
5. Coat the marinated chicken in the sweet potato starch. Squeeze the chicken tight so that the starch doesn’t fall off while frying.
