ππ³π€πΌ One of my favorite ways to use leftover rice. The combination of sweet and savory longganisa, plenty of garlic, a little heat from the chilies, and a runny fried egg never disappoints. I made this version with eathommali rice, which I love for its naturally fragrant aroma and fluffy texture which is perfect for fried rice. Save this for your next leftover rice night.
Longganisa Fried Rice Recipe
β’ 3 cups day-old Thai Hom Mali rice
β’ 8 oz. pork or chicken skinless longganisa
β’ 6-8 cloves garlic, minced
β’ 2-3 chilies, sliced
β’ 3 green onions, sliced (white and green parts separated)
β’ 1 tbsp fish sauce
β’ 1 tbsp soy sauce
β’ Salt and pepper, to taste
β’ Fried eggs for topping
1οΈβ£Brown and caramelize the longganisa. Remove and set aside.
2οΈβ£ In the same pan, sautΓ© the garlic, chilies, and white parts of the green onions until fragrant.
3οΈβ£ Add the rice and toss until heated through.
4οΈβ£ Return the longganisa to the pan.
5οΈβ£ Season with fish sauce, soy sauce, salt, and pepper.
