If you’re firing up the grill this weekend, make this Grilled Summer Veggie Platter. It’s colorful, easy to make, and goes with just about anything coming off the grill. Literally, the perfect side dish for all your summer cookouts!
Ingredients:
Vegetables:
• 2 ears corn, husked and cut into fourths
• 2 green zucchinis, cut lengthwise into quarters
• 2 yellow summer squash (yellow zucchini), cut lengthwise into quarters
• 1 bag mini bell peppers (about 12–16), left whole and pierced once with a fork or skewer to prevent bursting
• 2 red onion, cut into thick wedges
• 1 bunch asparagus, ends trimmed
• 16 oz mushrooms (baby bella or white), whole
For the Garlic Herb Marinade:
• ⅔ cup avocado oil
• 1½ tsp garlic powder
• 1½ tsp dried oregano
• 1 tsp black pepper
• 1½ tsp salt, or more to taste
