An excellent use for the gorgeous Summer tomatoes that we are all celebrating is to hollow them out, dice the insides up, add them to some beaten eggs and fresh herbs and cook them together in a skillet. It’s a perfectly simple and seasonal little package wonderfully appropriate for breakfast or dinner. Seasonal simplicity at its best!! 🍅 🌿 . . Tomato Omelettes . . 2 big tomatoes, sliced and the insides removed. 2 eggs, beaten Salt and pepper to taste 1 tbsp chopped scallions (or chives) 1 tbls chopped basil or parsley 1 tbsp flour Grated Parmesan Dice up the insides of the tomatoes and add to the beaten eggs, herbs and seasoning. Mix well. In a non stick skillet, spray with non stick spray or use a tbls or 2 of olive oil. Lay the tomato slices down and fill with egg mixture. Cook for 2 mins over medium low, flip and sprinkle each with a bit of grated Parmesan. Cook 2 more minutes on the other side or until set.
