🥩 Grilling Series S3 Ep. 6: The Best Picanha | the simplest, yet best piece of beef you can get for your simmer cookouts.
1 Picanha (I used one from snakeriverfarms)
1 tsp salt per pound of beef
Pat the picanha completely dry and liberally season with salt. The place it on a wire rack and transfer to the fridge for 12-24 hours.
Remove it from the fridge at least an hour before cooking.
Heat your grill with 2 zones. Once it gets to like 350°, place the meat on the cooler side and cook until internal temp reaches 120°.
Once done, remove the picanha and let it rest for 10-15 minutes. Then slice it with the grain. Yes with the grain. It should look like strip steaks.
Get your grill super hot, and sear each strip for 2 minutes per side, or until you get a nice crust. Then remove and slice against the grain. Enjoy!
