Under-rested dough is the number 1 cause of a paratha breaking while you roll. Don’t over-wet the dough. Soft, not sticky. Add water slowly; you can always add more. Seal well, then roll gently. Make sure there’s no air pocket or exposed filling, and use light, even pressure so the filling doesn’t tear through. Add onion last. Watery filling = torn parathas. Onion goes in right before rolling. Cook on a properly hot pan. Too cool and the paratha dries out instead of getting those crisp golden spots. Use ghee for flavor, oil for everyday.
