This one-pan orzo is the kind of dinner that immediately becomes a favorite. It’s inspired by the viral “marry me” sauce, but made even easier with quick-cooking pasta and pantry staples.
1 tablespoon butter
1 onion, diced
4 cloves garlic, thinly sliced
1/4 cup sun dried tomatoes
1 (15 ounce) can white beans, drained
2 tablespoons tomato paste
1 cup orzo
3 cups vegetable broth
1/3 cup heavy cream or cashew cream
1 cup baby spinach, chopped
Heat the butter in a large skillet over medium heat.
Add the onion and cook for 3 minutes
Add the garlic and tomato paste and sauté for 2-3 minutes until soft and fragrant.
Add the white beans, sun-dried tomatoes, and sauté for another 2-3 minutes.
Add the orzo and vegetable broth, and cover with a lid. Bring to a boil, then reduce the heat to low and simmer for 7-9 minutes or until the orzo is tender.
Remove from heat, stir in the cream and spinach, then cover and let sit for 1-2 minutes until spinach is wilted.
