Persians really do have the best rice recipes. This one is one of my favourites, Adas Polo. π¦ ππ€β€οΈπ
Ingredients
2 cups basmati rice
1 can lentils (or 1 cup soaked and boiled lentils)
2 medium onions, thinly sliced
1/2 cup raisins
5 dates, chopped
1/2 tsp turmeric
1/2 tsp ground cumin
1/4 tsp ground cinnamon
2β3 tbsp olive oil or butter
Salt and pepper, to taste
Method
1. Rinse the basmati rice until water runs clear. Boil in salted water for 5 minutes.
2. Add the lentils and boil for another 2 minutes.
3. Drain everything together.
4. Return the drained rice and lentils to the pot.
5. Cover and place on low heat for 5 minutes to steam and fully fluff the rice.
6. Caramelize the onions:
7. Heat oil or butter in a pan over medium heat.
8. Add sliced onions and a pinch of salt. Cook, stirring often, until golden brown.
9. Stir in raisins, chopped dates, turmeric, cumin, and cinnamon. Cook 1β2 more minutes.
